Easy Peasy Shepard's Pie

Ingredients:
1 pound ground beef
1 can diced tomatos
2 large potatoes/diced
1 can peas
1 can corn
2 eggs
1/2 cup of milk
1 cup of Bisquik mix
1 tsp. Rosemary
1 tsp. salt
2 tsp. garlic
1 c. shredded cheese

Preheat oven to 400 degrees.

In large pot, cover diced potatoes with water and boil.  To check if they are done, stab one with a fork, if it falls off when jiggled, it's ready.  You are looking for a consistency you can mash.  When cooked through, strain and empty into medium sized bowl.  Mash potatoes thourghly.  Add 1 egg and half a cup of water.  Mix well, set aside.

In large skillet, cook ground beef until brown.  In medium sized bowl, place layered paper towels.  Empty meat onto it.  Set aside.

In cleaned skillet, empty corn, peas and tomatos.  Bring to a bowl for 2 minutes.  After boiled, empty meat into veggie boil.  Let boil for 4 minutes, then let simmer. 

While veggie/meat mix is boiling, add 1 egg, 1 cup of Bisquik and 1/2 cup of milk together and cheese, mix well.  Set aside.

In 8.5 x 11 casserole pan, empty meat & veggie mix.  Over the top, evenly spread mashed potatoes.  Put in pre-heated oven for 10 minutes.

After 10 minutes, take out of the oven and evenly spread Bisquik mix over.  Put in over until top is golden brown.

When top is golden brown, pull out of oven and let cool for 15 minutes prior to serving.
